Congratulations Bryan & Carol

Once again Friedens very own administrative assistant, Carol Kantner, takes first place at the Bernville Community Day brownie bake off competition and comes in second place to Bryan Shaver’s pineapple upside down cake. If you care to try your own hand at these award winning recipes Bryan & Carol have thoughtfully shared their delicious recipes for you to enjoy. Irresistible Brownies


·         3/4 c butter

·         2 c sugar

·         1 1/2 c flour

·         1/2 c cocoa (Special Dark Cocoa)

·         1/2 tsp baking powder



·         4 eggs

·         2 tsp vanilla

·         2 c special dark chocolate chips

·         1/2 c bittersweet chocolate chips

·         1/4 tsp salt


Preheat oven to 350 degrees.  Melt butter, then add sugar, flour, cocoa, baking powder, salt, eggs and vanilla.  Stir until smooth.  Add 1 cup special dark chocolate chips and 1/2 c bittersweet chocolate chips.  Spread into 9 x 13 greased baked dish and sprinkle with remaining chocolate chips.  Bake 30 to 35 minutes and cool.  Cut into squares.








Pineapple Upside Down Cake


Cake batter

·         1 1/3 cups All Purpose flour

·         2/3 cup sugar

·         2 teaspoons baking powder

·         2/3 cup milk

·         ¼ cup butter softened

·         1 egg

          1 teaspoon vanilla


Pineapple topping

·         2 tablespoons butter          

·         1/3 cup packed brown sugar

·         1 8-ounce can pineapple slices, drained

        6 maraschino cherries

Melt butter in a 9 x 1 ½ inch round baking pan.  Stir in sugar and 1 tablespoon water. Arrange pineapple and cherries in the pan. 


Prepare batter for cake separately.  In a bowl combine flour, sugar, and baking powder. Add milk, butter, egg, and vanilla. Beat with an electric mixer on low till combined. Beat on medium speed for 1 minute. Pour batter on top of arranged pineapples.


Bake at 350 for 30 to 35 minutes or until toothpick comes out of center clean.   Cool on wire rack for 5 minutes. Loosen sides: invert onto a plate. Serve warm- serves 8.
